Lemon Apricot Cake

Ingredients

  • 1 Pkg. of lemon cake mix
  • 2/3 Cup of sugar
  • 1 Cup of apricot nectar
  • ½ Cup of Wesson oil
  • 4 eggs
  • 1 Cup of confectioners sugar
  • 1 Tablespoon of lemon juice

Cooking Instructions

Pre-heat oven to 325 degrees. Mix 1 pack of the Lemon cake mix, sugar, apricot nectar, Wesson. Add one egg at a time and beat well. Beat for 2 min. Grease and flour a tube pan. Bake for 60 min.

Frosting
Add 1 cup of confectioner’s sugar to lemon juice. Let the mixture run down the sides of the cake. *When buying cake mix, make sure it is plain and not the one with pudding in it.
