Lentils & Pasta
Ingredients
- 1 lb. of Lentils
- 6 Stalks of celery, chopped
- 3 Tablespoons of olive oil
- 3 Cloves of garlic
- 1 Onion, chopped in slivers
- 2 Small cans of Del Monte tomato sauce
- 1 Tablespoon of salt
- 2 Teaspoons of basil
- 2 Teaspoons of oregano
- Pasta
Cooking Instructions
Rinse lentils well about 2 or 3 times. Bring to a boil with 1 Tablespoon of salt. Let simmer for 1 hour. In a mid-sized, deep pot sauté garlic, onion and celery in 3 Tablespoons of olive oil. Sauté about 10 minutes. *Onions should be translucent but not brown. Add tomato sauce and cook on medium heat. Add basil, oregano, and salt to taste. Add lentils and peas. Cook 15 minutes between a simmer and a boil. Cook pasta and mix together.
